My company has skipped MDM and "released" my iPhone, but when I plug it into iTunes I still get the "This iPhone is supervised by another computer and cannot be used with this computer". How do I safely remove MDM from my iPhone without loosing any data?

That profile cannot be removed by you without losing data. You'll need to wipe the device and set it up as a new device. Profiles are embedded into the backups for security of organizational data.
The only way to remove that profile without losing data is connecting it to the computer that installed the pairing restriction and removing it.
They should be able to. If they can't/won't, unfortunately, there isn't much you can do without losing data.
It depends on how they added it to the MDM. If they use Automated Device Enrollment, then they won't need to connect the device to remove the profile. If they don't and they deploy the profile that blocks connecting to other computers manually using Apple Configurator 2, then they must connect and remove it.

But just to be sure: The IT department of my company, who applied the Management Profile, should then be able to remove the Mobile Device Management without loosing data. Is that correct?

I trust they will give it a try. But maybe just haven’t been aware that the iPhone need to be connected to the PC when releasing it from MDM
