Current Issue with the Weather App:

A. There is a Bug at this Moment:

As of this reply, there is an issue at this an moment with the Weather app. So, you'll just have to wait it out for a few. See this Link: Apple - Support - System Status

B. Screenshot: Click "Weather" at the very bottom-right corner.

Did you make sure, that Location Services have been enabled for the Weather app?

Note: Weather uses Location Services to get the forecast for your current location. To make sure Location Services is turned on, go to Settings  > Privacy & Security > Location Services > Weather. Turn on Precise Location to increase the accuracy of the forecast in your current location.

If the weather app can update the data only sometimes, did you already force restart your iPhone after the latest iOS update? You will not lose data.
