Messages are suddenly deleting on Watch when deleted on iPhone
I’ve just noticed that when I delete a message on my iPhone, it now deletes on my watch. Is this a new update? How else would this start happening?

It depends on the type of message. If it is iMessage, meaning between iOS devices, they delete everywhere. If it is SMS/MMS, meaning to anyone else such as non-iMessage messages, they don't.
