Is this happening with each email you receive? Do you recognize the address before and/or after it changes? Does the content of the email pertain to you? It sounds like you may need to verify the email addresses saved for the affected contacts. Perhaps the same address is associated with more than one contact.
View your contacts in Contacts on Mac

It only happens with people who are known senders. Say I get an email from a friend. It will show up as being from another friend. It doesn't always happen. It happens about once a week or so.
