Hi,
Similar to previous posts and issues, it seems impossible to rename/edit a new collection in Font book, and it's automatically labelled 'Unknown collection'. Is there a way to fix that? (using Ventura 13.0)
For one, it is suggested to update the Ventura 13.0 to the current version 13.3
The updates bring bug and security updates that maybe related to the original issue of this computer

FWIW, There have been multiple changes since Ventura 13.0. The current version is 13.3. You should update and test again.
Just to add, to rename a Collection in Ventura 13.3, double-click on the collection so it highlights and type in the new name.
