Apple care I want to enroll my device in Apple care + coverage before it’s too late, but I’m not seeing the option for some reason, yet it’s still covered in limited warranty until February.

For information about how to extend your AppleCare+ coverage, read this support article --> Extend your AppleCare+ coverage - Apple Support

You cannot extend it until after it expires. You then have 30 days to extend it.
