Right now I'm hating Dictionary and honestly would like to just get rid of it. It constantly interferes if I'm trying to copy something and blowing my patience. Anybody else like this or know how to disable it?

It's not the Dictionary. It is the Force Click gesture. You are pressing too hard on the trackpad.
You can disable the Force Click gesture to look up the selected word in the Trackpad Settings.
