When I set an alarm with Siri, why doesn't it use my last used alarm sound? I can set it manually, but after the last update when I ask siri to set an alarm, it uses a different sound. Is there a way to set the default sound another way?

No, I experience the same. If I ask Siri to set an Alarm which uses the default Alarm Tone (Radar). If I do it manually in the app, it chooses my last selected alarm tone.
It is not helping you, but just wants to confirm that you are not doing anything wrong or there is something wrong with your iPhone. It is either the intention that it should be like this, or it is a software bug.
Thank you as It wasn’t doing it before Apple store updated my phone. They told me it was a software bug and then they tried to fix it again, but here I am. I spent hours in multiple appointments in the Apple store and them confirming it is a problem, but no one seems to be able to fix it.
You are completely right. I don't think I experienced this in iOS 15 either, so I'm almost certain it was changed in iOS 16.
