MacOS used to preview EPS files just fine.
However, in the past few releases this has dropped off.
We're able to preview InDesign and Illustrator files, so I see no reason as to why we can't get EPS preview working again!
For someone who works in a design/video editing studio, not being able to preview EPS files natively in the OS is a big headache.

They do, it's just that having EPS preview baked into Finder/Preview is better in almost every way, and it's something that Apple offered in all operating systems prior to Monterey. In that sense, Monterey and Ventura are somewhat of a downgrade for creatives.
If you are looking to get some feature restored your best path is to submit feedback to Apple. We’re just fellow users here who can offer suggestions but not influence Apple.
Whatever app you use to create EPS files could create a preview generator for their customers.
There are several 3rd party tools for this, and also a tool for .eps QuickLook.
Not in the app. Developer’s create the preview generator extensions for previewing their files in Finder.
Can we please get EPS preview back in Finder?
