I just received a new mac mini 2 and have yet to purchase a monitor. Is it possible to use my Macbook Pro (15-inch, 2018) as a monitor, keyboard, and track pad for the Mac Mini in order to set it up?

Nope’ you need a display, keyboard and mouse to do the setup.
Most any display or even an HDMI TV will work.

Also most any old Generic or PC wired USB keyboard and mouse will work.
