Yes, you can update watchOS directly on your Apple Watch as long as you have watchOS 6 or later already installed, and your watch is connected to Wi-Fi:

Thank you for the quick and very helpful response. Unfortunately, after calling Apple Support I learned that my Series 7 iPhone, an oldie but goodie, is technically obsolete. And when paired with an Series 7 iWatch, that device combination will not allow the iWatch software to be updated to the latest ios. C'est la vie. But thanks very much.
