Just got Apple Music family subscription. every time I connect my phone to the car stereo or Alexa and play Apple Music, the device ends up freezing. It seems to freeze after skipping a song or two. When frozen, I am unable to turn volume up or down or switch off of aux and use the radio.
tested with Spotify and it doesn’t freeze the stereo like it does with apple music

To be more clear, Apple Music plays fine on the connected device….until you skip a song or two which causes the device to freeze. it’s not Apple Music that is freezing. It’s the device the iPhone is connected to. The device freezes while Apple Music app still works fine on the phone. This is happening when connecting to stereo in the car via AUX and also when connected to Alexa Echo Show. Both devices are connecting via Bluetooth. The external device freezes, meaning you can not turn volume up or down and the song name on the device is not the song actually playing and the clock is frozen.
the only thing that unfreezes the device is a complete reset, which in the case of the car means turning off the engine. So if it freezes the stereo while driving, there is no way to use the stereo at all. I can’t switch out of aux and use regular radio. It’s stuck until I turn off engine and start back up again. Total bummer.

Without knowing the exact type of car stereo unit you're using, it does sound like the issue is isolated to using the Apple Music app specifically when connected to the car stereo via Bluetooth. If you are using CarPlay, you can try the suggestions here:

If you're still having trouble after trying those steps, we would suggest contacting the car manufacturer to check for a firmware update for the stereo. That might be needed to resolve this issue.
