Love pencil but need a way to replicate "enter key" without pulling up keyboard. Many fields I write in don't seen to allow me to just tap and start a new line of text. Love notes but don't know how to do in even that application.

A guy named Nicholas Negroponte wrote a book, Being Digital many years ago about how the interface with the computer was a huge opportunity and could represent a breakthrough. Yours is comment frequently seen here. Unfortunately, there isn’t an equivalent Pencil gesture.
Perhaps the easiest and most effective workaround for your issue is to use a compact Bluetooth Keyboard with your iPad - such as the Logitech K380:
