iPhone 14 Pro Max - Technical Specifications
There is no setting for wifi 6, the phone automatically detects any compatible wifi network and connects to it.
The wifi indicator also does not reflect what version of wifi you are connected to.
D'oh - that's what I get for working on future stuff in my day job as I conflated Wi-Fi 6 with 6E, which of course is only supported on iPad Pros at the moment:
