It won’t show me shared data with people I’ve shared it with and it won’t let me remove them as friends. Also, friend #2 doesn’t even have an Apple Watch yet it is showing me that they haven’t closed their exercise and stand rings. And when I check their device it shows that they have closed their ring so it isn’t that they just aren’t moving.

Just to be sure, you’re using these steps from Share your Activity and compete with friends with your Apple Watch - Apple Support?
Remove a friend
1, Open the Fitness app on your iPhone.
2. Tap the Sharing tab, then tap your friend.
3. Tap Remove Friend. After you remove a friend, they can't see your activity, and you can't see their activity. To start sharing again, send your friend a new invite.
Restart your iPhone - Apple Support -- If you are, and if you haven’t already, see if restarting your iPhone allows you to remove them.
