Sleep Focus issues on iPhone and Apple Watch

For the past week I’ve noticed that my sleep focus decides to just switch itself off which is pretty annoying as then my room is lit up with notifications during the night.
I’m using an iPhone 14 Pro paired with Apple Watch Ultra, both running the most up to date iOS version.
It has worked absolutely fine for months on both my phone and watch and I can’t think of any reason it’s started to play up. I don’t have a sleep schedule set up so it’s not bound by set times.
So far to try and resolve, I’ve deleted the sleep focus completely in the iPhone settings, along with turning off ‘use this watch for sleep’ on the watch. I then created a new sleep focus on the phone (again, I haven’t set up a schedule as I don’t want one, I just turn on as and when I go to bed). I’ve got ‘shared across devices’ enabled. All notifications from people and apps are not allowed (other than 2 calls within 3 minutes).
I have then tested by turning sleep focus on and messaging + calling my phone from another number - all worked as it should. But then, a few minutes later, it had switched itself off again (back to no focus on at all). I tested again last night when I went to bed - woke up and it yet again it had switched itself off.
For additional info - Do Not Disturb focus works perfectly but I use the sleep focus as it locks my watch screen and does all the other nice stuff like simplified Lock Screen etc.
Any help with this will be greatly appreciated!
