Upper Range of Pace Alerts Stuck at 3'10" Pace

I'm trying to set pace alerts for different intervals on a custom workout on apple watch. I want it to be a range between two paces. Whenever I go to customize the "upper limit" pace, the only options it gives me are 3'00" per mile or 3'10". This is way too fast, why can't I change it to something else like 8'00" per mile?

Same issue for me. Apple is not providing "ultra" like tools for those of us that are trying to use it as a training tool. This is kindergarten type stuff for Garmin...and should be for apple as well. Do they not have anyone of their 36,000+ employees that are runners / triathletes that are wear testing and debugging these exceptionally basic training features? Fascinating, and a huge roadblock to me being able to be a raving fan and recommending the device to my hundreds of runner / triathlete friends that are committed to the garmin ecosystem. SMH.
