Converting an Exfat drive to APFS with Ventura

I have an external 2TB Seagate drive formatted for ExFat. Discussion threads suggest converting to ASPFS using Disk Utility and Edit. However when I select the drive, go to DU, select edit, Convert to APFS, that is greyed out. How to proceed please?

Mac Studio, macOS 13.0
