Now that we have traded in our old iPads, what can the 10 watt chargers be used to charge safely? Newer iPads, iPhones and MacBooks have different watt chargers.

It can be used with any iPhone including the latest models if you have the cable that you used for the iPad (or any USB to Lightning cable). It will charge an iPhone but won't fast charge (see: Fast charge your iPhone - Apple Support ).
I use one to charge my Kindle e-reader.
