If you're using the outdoor walk workout, while the Apple Watch may remind you to end your workout, your workout continues until you choose to end or pause. Use the Workout app on your Apple Watch has this information for you.
"In watchOS 5 or later, when your Apple Watch senses that you're done working out, it taps you on the wrist and asks. Tap the notification to end or pause the workout, or dismiss the notification and keep working out. If you don’t respond to the notification or you dismiss it, your workout continues until you choose to end or pause.
How long it takes for your watch to notice that you've stopped varies by workout type.
To turn this setting on or off, open the Settings app on your Apple Watch, tap Workout, then go to End Workout Reminder."
With that in mind, it's possible that accidental taps are ending the workout for you. To avoid this, we recommend locking your screen during your workout. Adjust the workout settings on Apple Watch has more info.

If the exercise you’re doing or the gear you’re wearing causes accidental taps on your Apple Watch, lock the screen so your workout record isn’t interrupted.
If you're using a running or cycling workout, they can be paused automatically. This setting can also can be managed using the steps below:

Your Apple Watch automatically pauses and resumes your outdoor running and cycling workouts—for example, if you stop to cross the street or get a drink of water. You can manually pause your workouts by pressing the side button and Digital Crown at the same time."
