I have a feeling this is no longer possible but I really need to change how the date and time are displayed in the upper right corner of my screen. That used to be editable but I can't find that function. I'd like to add day-of-the-week in particular. Thanks in advance

go into System Settings > Control Center. and then in the right hand panel, scroll down to the "Menu Bar Only" section. and choose "Clock > Clock Options"

I haven't disabled any System Prefs items but I don't see a Control Center there!
In fact my system prefs appear quite different; the traditional grid of icons, not what is pictured in your screenshot.
Click on Dock & Menu Bar. Scroll down to Clock.
I didn't notice that your profile says "12.6". but your system preferences panel showed me that you are on monterey. so, sorry, the steps I showed are for Ventura. but I no longer have monterey installed anywhere. so I can't look and see where you might find those options.
