How can I change my iCloud email to a different name?
Is possible to change my email name example 123@icloud to 321@icloud.

No, that is not possible. The prefix (the part in front of @icloud.com) cannot be changed once created. But you can make an iCloud Alia’s to use instead - see Add and manage email aliases for iCloud Mail on iCloud.com - Apple Support
