I placed an order on October 28th. Its expected to arrive between November 21-29. The order has been showing processing ever since and also this message “We've received your payment information and we're preparing your order”. The amount hasn’t been charged on my credit card. Just want to make sure if this is the only way they do it and would charge once the order’s ready for shipping.

This is normal behaviour. As the anticipated arrival date approaches the status will change to preparing to ship, then to shipped. At that time, Apple will send you an email with an updated arrival date and tracking information. Also at that time your method of payment will be charged.
