Do your Part: Inform Apple if something is not working as it should. Apple wont get back to you directly, but the more feedback thy receive from its users, the more likely they will know what needs to be fixed.

1. Go Here: Feedback - macOS - Apple
2. Select: "Bug Report" for the "Feedback Type"
3. Select: "Application/Utilities" for the "Feedback Area"
4. Comment: that this all began after installing an update. Include the URL of this thread.
5. Proceed from there as necessary.

You must first select the source text before applying Format > Copy Style, and then select the recipient text before the Format > Paste Style menu item becomes available. Tested: Pages v12.2 on macOS Monterey 12.6.1.

All the shortcuts are shown in grey. See if it works in Safe Mode. Then restart in normal mode and test again.
