Settings changing by themselves

I don’t use the Game Center on my iPhone 12 and keep it turned off at all times. While checking my iCloud settings, I noticed that Game Center was turned on. It was not on yesterday. No one else has touched my phone.

So I went to the Game Center setting and it was turned on and signed into and the profile said “unknown”. I immediately signed out and turned off the iCloud setting for Game Center. How are these settings changing?? I check my settings often.
