A really easy method of creating a PDF file from Apple Notes is simply to tap the ellipsis (three dots) button at top right of the screen - then select Print. The print dialogue will open - and from here you have two options:
1) Touch-and-hold (i.e., a long touch) the Print button at top right; from the action menu, select Save to Files.
2) Use a two-finger “zoom-out” gesture on the thumbnail image of the note. Your note will open in a new page; tap the Share button - and select Save to Files.
In both cases, this will save a PDF version of your note to wherever you choose to save it.
The ellipses button didn’t have the Print option; however, if you swipe the note to the left ◁ you will find a share button.
Everything after was as you had described.
