Why does my iPhone 11pro always show up as iPhone 6

Go to Settings->General->About->Name and change the name there.
If you used a backup from an iPhone 6 to setup the iPhone 11, it also transfers the name. If the name was set to "iPhone 6", then that what it will set it to on the new one, and what will use to identify itself to other bluetooth devices. You can of course change it to anything you want at any time for any reason. Is completely customizable.
