Apple Watch restarts in nightstand mode

I recently had to unpair/repair my series 2 watch and ever since it does a restart every time I put it in nightstand mode.

Apple Watch Series 2, watchOS 6

That’s exactly what I did to fix a previous issue and since re-pairing as a new watch instead of from a backup, it’s started doing a restart every time it goes into nightstand mode.

surely if I repeat the same process I will still have the same issue?
