I have Monterey 12.6. I used to be able to keep mail, calendar and safari open and stacked on my screen and toggle between them. Suddenly (i.e. past month) I cannot keep more than two. I did not change anything, but did do updates to software. What happened, and how can I get back to my preferred viewing?

There is nothing preventing the user from setting the window arrangement in way he likes.
Please give more details of what exactly you are doing, and what happens when you try it, so we can guide you.
One possibility is that you have some applications associated with different Desktops (a.k.a. Spaces).
How many Spaces do you have? As P. Phillips suggested, press F3 (or swipe up with three fingers) to see Mission Control.
Do you see more than one Desktop at the top of the screen? Like this? Note that I have 10 applications, all in the same Desktop.
I also have a second Desktop. This one can be deleted. Jyst hover near it until the close icon appears at the top left.
