Hello Dariel03,
Thank you for reaching out to Apple Support Communities, and we'll be happy to help in any way we can. We understand you're having issues with the way the time is spoken after the update. Check if the Apple Watch has been placed into Low Power Mode, as this may affect Siri voice feedback quality: Use Low Power Mode on your Apple Watch - Apple Support
"How to turn on Low Power Mode on your Apple Watch
- Touch and hold the bottom of your Apple Watch screen. Wait for Control Center to show, then swipe up.
- Tap the battery percentage button.
- Turn on Low Power Mode.
You can also turn on Low Power Mode in Settings.
- Open the Settings app on your Apple Watch.
- Scroll down, then tap Battery.
- Turn on Low Power Mode.

Each time you turn on Low Power Mode, an information screen appears. Scroll to the bottom, then tap Turn On or Turn On For. If you select Turn On For, you can choose 1 Day, 2 Days, or 3 Days.
When your Apple Watch is in Low Power Mode, a yellow circle icon
appears at the top of the screen.

Also, the battery percentage button in Control Center, the charging animation, and the time in Nightstand mode all turn yellow."
If Low Power Mode is enabled, please disable or charge the Watch, then test the issue again.
If the issue persists, please reach out to Apple directly for support here: Get Support
We hope this helps.
Cheers!
