Based on what you provided, only "software updates" appear to be significant. It is not unusual for there to be activity for at least 24-48 hours after a major iOS upgrade ... especially if you transferred data from another phone. For example, all third-party apps will have to be re-downloaded from the Apple App Store. Depending on how many you have, this can consume data.
