Can't update Apple Watch Series 6 (version 8.7) with iPhone 7 (15.7)

I'm not asking to get the latest compatible with my Watch, which I, apparently can no longer get because I don't have the latest phone, rather, my watch asks me to update, but will not be able to, even for security reasons, apparently, because it is demanding *another* product have updated hardware. This seems a bit...uncool.

Fine, let's revise my question: can someone point me to where I might complain that Apple requires me to update my phone in order to use my watch?

I recognize that will do no good at all, but feedback is still valuable.
