I want to transfer all my stuff from my iPhone 13 Pro AND Apple Watch S7 to my new iPhone 14 Pro AND Apple Watch S8. What is the best (and fastest) way to do this? I have seen several articles on how to do this individually, but I want to know in what sequence should I do it?

So, just to clarify, the steps would be:
1) Remove older Apple Watch S7 fro older iPhone 13 Pro following the steps above;
2) Set up new iPhone 14 Pro by transferring data from older iPhone;
3) Pair new Apple Watch S8 to newer iPhone 14 Pro.

Yes and when asked restore the watch from the backup you made when you removed the old watch through icloud.
Transfer from an older iPhone and Apple Watch to a new iPhone and Apple Watch.
