Best upgrade for intense processing

How's it going, I do a lot of 3d animation and video editing and currently run these specs on a 2018 Mac Mini

3.2 GHz 6-Core Intel Core i7

32 GB 2667 MHz DDR4

Razor Core w/ AMD Radeon RX 6600 XT 8 GB

For software like Blender 3D and Adobe Suite, im still not pleased with the performance after a few temporary cost-efficient solutions (college student) and am looking to upgrade, what are the best options with mac computers? im aware its quite easier to just switch over to windows but im not interested.

Mac mini 2018 or later

For your use, my suggestion would be a MacStudio. An M1 MacMini does not have the ability to use eGPUs so 3D rendering may not be all that great.

So, buy the machine that actually meets your needs like the MacStudio.
