How to hide information under Settings-devices?

I noticed when I am signed in to APPLE ON IPAD and IPOD devices - if you look at your name under Settings - the devices now show your - NAME, YOUR FULL ADDRESS, YOUR EMAIL, YOUR PHONE NUMBER, YOUR CREDIT CARD and YOUR BIRTHDATE - when I called APPLE to see how to HIDE this from devices she had no answer. She said make a passcode. BUT, I do not want any of this on my devices. IF by chance you have your device grabbed while using it and already in the device, Whoever grabs it can see all your personal information and possibly try to steal identity. OR HACKERS getting into device. The gal at APPLE said well, I would call cops first. THAT IS NOT MY POINT - I DO NOT WANT MY INFO ON ANY DEVICE - especially HACKABLE DEVICES which APPLE WAS JUST HACKED - EXCUSE ME! I guess I will lose my calendar and all because I will not sign in and have my info on devices. ANYONE KNOW A WAY to HIDE the INFO? You can change date of birth and also your name BUT if you go into credit card part it will not hide your full name and address that goes with a credit card
