I don't use the "mail" app on my macbook, yet it's using up 5+ GB in my memory (since I think at some point I linked it to my gmail account). I want to delete the Mail app. How do I go about doing this?

Sorry, but you can't as it is built-in with the macOS. Be wary of third-party "solutions" that promise to safely delete it.
Have you already performed message housekeeping to remove unneeded messages/attachments?
