Hi, when I setup my watch I’m sure it asked me if I was wearing it on my dominant or non dominant wrist but I can’t find this setting now to change it.
just to be clear this is not simply if I am wearing it on my left or right wrist which is in general and orientation but if the wrist it’s on is my dominant or non dominant wrist.

You would have to unpair,erase and then setup the watch as new,that is the only time you are asked about the dominant wrist.
