Is AIFF supported? Is MP3 Supported? How can I make an AIFC file with iTunes?

The iTunes Music store sells tracks in 256K 16-bit AAC format, you cannot choose anything else. The iTunes application supports a wider variety of formats for music you might rip from CD or download from other sources. See also About lossless audio in Apple Music - Apple Support.
