I wanted to create a new Apple ID (not a 2nd one, a completely new one).
But when I go through the process, it asks me for a phone number to verify my identity.
Here is the problem: I do not want to give Apple such personal information like a phone number.
How do I create an Apple ID without giving out such personal data? I do like my informational self-determination!
So how can I turn this off?
I don't want to centralise so much personal information. This isn't safe and doesn't minimise personal data in the hands of others.

What you mentioned is what I was raising, so I know that,.
But my question was: How do I do it without a phone number?
I have another Apple ID where I was not asked about such a personal detail when I created it.
As a user I am responsible to keep my information secure. And the less I give out, the less can get into the wrong hands (remember: Nothing is 100% safe). So data minimisation it is, especially with personal data like that. And I'd like to remain in control of the amount I give away.
So I am assuming there is a way to create an Apple ID without giving out such personal details. I just wonder if I missed something here.
If you are creating a new Apple ID, the ID will have 2 Factor Authentication enabled on the account. The phone number is needed so when you try to sign into the ID, a verification code can be sent to your phone so you can sign in.

In the past, you could make an Apple ID without a phone number. That was back in the days when there was less safety and security on your account
On a new account, as Eric Root said, two factor authentication is standard enabled, and you cannot make a new account without providing your phone number to keep your apple id safe with two factor authentication.
