I backed up my watched prior to pairing it with my new phone and I know get notifications pushed through to my watch but all my data is no longer there and my phone isnt currently backing up my watch. I don't know how to fix it

Yes because a watch can only be paired to one phone at a time.

See the page you came from and start at the section;

"If you don't have your old phone or have erased it".
