If you have light mode set, when you are in the Settings app, is it black text on white background or white on black?
Is it just the Mail app you see this in?
Try a force restart?
meaning your phone switched to Dark mode?
go to Settings > Display & Brightness and tap on the Light checkmark. If you want to change it from automatically switching then turn off the Automatic switch
