Pairing Watch to Phone After Restoring Phone Backup

I had to restore a backup to my iPhone 12 Pro running iOS 15.5. When I open the Watch app it wants me to pair the phone to my watch. I try and fails, telling me the watch may be paired with another phone.

All the instructions about unpairing and repairing assume you can open the Watch app on the phone. I can't get beyond this screen. How can I unpair my watch?

Thanks,

Kyle
