Creating a new Apple ID

I have got a new MacBook and want to create a completely new Apple ID. My current one is linked to email address and account that I had when living overseas and I want to separate out from that, not just change the email account for it or any other data. I subsequently want to create whole new iCloud email address, not just create aliases for use with the old primary iCloud address.

Is all this possible, please? And, if so, how do I do it? I cannot find anything in the Apple Support guides that tell me how to do it.
