If I buy an Apple Watch in Europe- Italy to be precise, will it work in Canada.

If it's a GPS only watch then yes,if it's the cellular version then the cellular part won't work and it will function as a GPS only watch.

Like I said,the cellular part won't work because it operates on different radio frequencies than a Canadian/US watch.
