Deleting unwanted apps on apple watch

After trying to remove unnecessary apps on the watch by pressing and seeing the jiggling apps, no delete symbols or minus sign to delete.

On my iPhone I opened the watch app, scrolled to the unwanted app entered the area to slide the green switch from green to gray, it jumps back on immediately.

Help please.
