update watchos

hi, I am wondering if I can still use an apple watch like normal (it can still track and sync activity, steps, sleep, etc to my iPhone, play music, connect to AirPods, get and answer calls and text, use apple pay, etc) if I don't update the watchOS.

Yes but you will have some security holes that won’t be patched.

Apple Watch connectivity If I have an Apple Watch SE and I have an iPhone SE (2016) connected together, what happened when the iPhone will no longer have a update (iOS)? Does it will no longer be compatible with the Apple Watch?
