In previous versions of iOS, the Messages app would let you swipe right to mark a message as read and swipe left to delete a message. In iOS 14, swiping right on a message just pins it. It’s driving me nuts. There must be a way to reset it?

There isn't. Same functions are available on iOS 15 as well. Swipe Right to Pin. Swipe Left to Mute or Delete.
