Epson printer driver install fails after installing Big Sur 11.6

I upgraded to Big Sur 11.6 and could not print to my Epson SC P5000 any longer. I tried installing the new driver available from Epson, and it failed. In trying to fix this, I also uninstalled the previous printer drivers and it still fails to install... without any reason or details offered.

I'm completely at a loss, the Mac Mini will not allow me to reinstall a previous OSX, (and for "security reasons" won't let me boot from an external drive???)

Mac mini 2018 or later

You need to contact Epson Support and determine if they have an alternate Big Sur solution to secure your investment in the SureColor. Very likely no printer driver prior to Dec 2020 will work either.

Did you download and install the following from Epsons site?

and follow that installation with Resetting the Print system… by right-clicking on that device entry on the Printers & Scanners panel? New drivers won't be recognized until you re-add the device and choose the specific vendor drivers for it.

Yes, I reset the printers in the panel as you've described. The problem is that both the Combo package and the (stand alone) print driver fail to install. I have downloaded both twice, and they will NOT install. I even uninstalled the Epson printer software (ugh), so now I don't even have printer ICC color profiles for the papers I use.
