is there a difference between an aluminum and stainless steel case?
I meen in how it looks and how the watch works

Aluminium has a duller look.
Stainless steel has a shinier look.
Stainless steel is a more rigid and harder material than aluminium.
Doesn't affect how the Watch works, at all.
