I'm buying a new MacBook Pro that needs run MacOS Catalina because of software that is not MacOS Big Sur compatible.

It won't work with an M1 MacBook Pro. It may work with an Intel. They were originally shipped with 10.15.4.

Just to add in. Catalina can not run on Apple Silicon M1 at all. Way different Machine Code is required for M1 chips and Catalina does not contain this.
